How Is Oil Selection Important?

In selecting oils, it is important to know that all vegetable oils are cholesterol free and that seafood and animal
products – meat, eggs and dairy products – are the only dietary sources of cholesterol. However, your choice
of vegetable oils can help control your cholesterol, based on the following:

All dietary fats, including vegetable oil, consist of three basic types of fatty acid – Saturated Fat, Polyunsaturated
Fat, and Monounsaturated Fat. Each of these fats affects cholesterol in a different manner. Saturated Fat has been
shown to RAISE cholesterol levels, therefore reducing Saturated Fat intake should be an important part of a daily
diet; Polyunsaturated Fat and Monounsaturated Fat have both been shown to REDUCE cholesterol levels. Selecting
the right oil can be an important part of your daily diet.
