Peach Cobbler Batter Bake
Cook Time: 45 min.   Serves 10-12

Fruit Topping

6 cups (1500 mL) peaches, peeled, sliced, fresh or frozen
1 cup (250 mL) sugar
1/2 teaspoon (2 mL) almond extract
1/2 cup (125 mL) Challenge® CANADA corn starch

Batter

3 cups (750 mL) all-purpose flour
2 envelopes FLEISCHMANN’S® Quick-Rise Yeast
1/4 cup (50 mL) sugar
1 teaspoon (5 mL) salt
1-1/2 cups (375 mL) milk
1 cup (250 mL) butter or margarine
2 eggs
MAZOLA® SIMPLICITY™ Olive or Canola cooking spray

Directions


Fruit: Combine sugar and corn starch in a medium mixing bowl
stirring with a rubber spatula. Add peaches and almond extract;
stir to combine and set aside.

Batter: Spray 9" x 13" (23 x 33 cm) baking pan or casserole

dish (or any 3-liter casserole dish) with cooking spray. In large mixing bowl, combine flour, undissolved yeast, sugar, and salt. Heat milk
and butter (or margarine) until it is warm to touch 120° to 130°F (55° to 55°C), and slowly add to flour mixture. Add milk and eggs; stir until well blended. Pour batter into baking pan and evenly distribute peach mixture over top. Let rise in a warm area for approximately 30 to 40 minutes. Batter should become puffy. Preheat oven to 350°F (180°C) for metal or glass pans and 325°F (160°C) for dark or coated pans. Bake 30 to 45 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and cool 20 to 30 minutes prior to serving.
