Spiced Pancakes with Apple Toppingpreptime_ten

1/4 cup (50 mL) butter
1/4 cup (50 mL) sugar
3/4 cup (175 mL) apple juice
1/4 cup (50 mL) OLD TYME® Regular or Butter table syrup
3 large apples, cored, peeled and cut into 1/2-inch (1 cm) slices
1 cup (250 mL) original pancake and waffle mix
or 1 container (470 mL) frozen pancake batter, thawed
1/2 teaspoon (2 mL) ground cinnamon
1/2 teaspoon (2 mL) vanilla extract
1/4 teaspoon (1 mL) ground ginger (optional)
2 teaspoons (10 mL) Challenge® CANADA Corn Starch
or BENSON'S® Corn Starch

Directions
In 12-inch (30 cm) nonstick skillet, melt butter and cook sugar,
1/2 cup (125 mL) apple juice, Old Tyme® syrup and apples
over medium heat, stirring occasionally, 15 minutes or until apples
are tender. Meanwhile, prepare pancake mix according to package directions, blending in cinnamon, vanilla and ginger. In another

nonstick skillet or on griddle, cook pancakes, turning once, until done.

In small bowl, with wire whisk, blend remaining 1/4 cup (50 mL) apple juice and corn starch. Add to apples and bring to a boil over high heat. Boil, stirring occasionally, 1 minute or until thickened. Serve with pancakes topped with the Spread and OLD TYME® table syrup.
